OUR STORY
Mode is a family-run business and a true labor of love. In 2020, husband-and-wife duo Tracy and Randy Davis launched Pasta a la Mode, a California-Italian scratch kitchen on wheels featuring handmade pasta, paninis, and pizza, celebrating flavors from around the globe.
A few years later, they expanded the business to realize their long-held dream of opening a brewery and restaurant.
Tracy was the heart and soul of Mode. She brought warmth, creativity, and an unwavering love for people to everything she touched. After Tracy passed away from leukemia, her spirit and indelible mark remain at the heart of Mode, woven into the food, the space, and the community she loved so deeply.
Today, the Mode family carries that love forward, bringing together a world of flavors, local ingredients, and a whole lot of heart to share with you—our treasured community here in Orangevale.

Tracy Davis
Tracy was the inspiration and driving force behind Mode. A seasoned restaurant professional, Tracy drew on her years of experience, her unfailing work ethic, and her sheer determination to build Mode from the ground up. Tracy cared deeply about people and believed in creating a place where every guest felt like family. Though she passed too soon, her warmth, spirit, and vision remain at the heart of Mode.
Her dream lives on in all of us.
Randy Davis
Randy is our Executive Chef, and his passion for food is the heart of Mode's menu. Formally trained in the culinary arts, Chef Randy honed his craft at Grange, The Sawyer Hotel, and Shangri-La, working his way from line cook to Executive Chef through years of dedication and experience. A true craftsman, he lets the seasons, exceptional ingredients, and bold flavors guide every dish he creates. His commitment to quality and creativity ensures that every plate served at Mode delivers a memorable dining experience.
Jeff Losch
Jeff is our Brewmeister and resident Mode MacGyver. His passion for brewing shines through in every batch, blending curiosity, creativity, and unwavering dedication to the art of brewing. Jeff expertly balances time-honored brewing techniques with an adventurous spirit, crafting both classic beers and innovative seasonal releases that keep our taps fresh and exciting. Whether he's perfecting a beloved favorite or developing the next unexpected brew, his craftsmanship is at the heart of every pint.
Gayle Losch
Gayle is Mode's Nana—the friendly face that greets you with a smile, remembers your name, and makes every visit feel like coming home. Whether she's taking your order or sharing a laugh, she goes above and beyond to ensure every guest feels like part of the family. She's also the creative mind behind our famous Nana's Ice Cream Balls. Made with the same warmth and care she brings to every interaction, they're the perfect sweet ending to any meal.
